4-5 cups seedless watermelon, cubed
1 cup fresh lemon juice (about 5-6 large lemons)
3 cups cold filtered water
1/2 cup granulated sugar
1/2 cup water (for simple syrup)
Fresh mint leaves (optional garnish)

Make simple syrup: In a small saucepan, heat 1/2 cup sugar and 1/2 cup water over medium heat. Stir until the sugar dissolves completely. Remove from heat and let cool.
Blend watermelon: Place the cubed watermelon into a high-speed blender. Blend on high until completely pureed.
Strain: Pour the watermelon puree through a fine-mesh sieve over a bowl. Discard the thick pulp left behind.
