Steak Bites with Sweet Potatoes

These incredibly juicy steak bites and tender sweet potatoes come together in just 15 minutes! Cooked in a single skillet with a savory glaze, this healthy, family-friendly dinner is the absolute perfect solution for busy weeknights.

Ingredients

  • 1 lb flat iron steak, cut into 1-inch cubes

  • 1 large sweet potato, peeled and diced

  • 2 bell peppers, seeded and diced

  • 4 green onions, thinly sliced

  • 2 cloves garlic, minced

  • 3 tbsp olive oil, divided

  • 2 tbsp coconut aminos

  • Salt and black pepper to taste

Instructions

  • Place diced sweet potatoes in a microwave-safe bowl with a pinch of salt. Cover and microwave on high for 4-6 minutes until just tender.

  • Pat steak dry and season generously with salt and pepper.

  • Heat 1 tbsp olive oil in a large cast-iron skillet over high heat. Add steak in a single layer. Sear for 2 minutes per side until a crust forms. Remove steak and set aside.

  • Reduce heat to medium. Add 1 tbsp olive oil and the par-cooked sweet potatoes. Cook for 3-4 minutes until edges crisp.

  • Create a well in the center, add remaining 1 tbsp oil and minced garlic. Cook for 30 seconds.

  • Add bell peppers and green onions. Sauté for 3 minutes.

  • Return steak to the skillet. Pour in coconut aminos. Toss everything together for 1-2 minutes until liquid reduces and glazes the meat.

  • Serve hot and enjoy!

Notes

  • The Microwave Trick: Don’t skip par-cooking the sweet potatoes in the microwave! It ensures they are perfectly tender on the inside before they crisp up in the hot skillet.

  • Meat Substitutions: Flat iron steak and top sirloin are the best cuts for this recipe. Make sure to cut them into uniform 1-inch cubes so they cook evenly.

  • Sauce Swap: If you are not strictly following a Whole30 or Paleo diet, you can easily swap the coconut aminos for low-sodium soy sauce.

  • Storage & Reheating: Store leftovers in an airtight glass container in the fridge for up to 3 days. For the best texture, reheat the steak bites gently in a hot skillet for 3 to 4 minutes rather than using the microwave.
