The Best Sheet Pan Sausage and Peppers

Ingredients

  • 1 lb raw Italian sausage (mild, sweet, or hot)

  • 3 large bell peppers (mix of red, yellow, and green), sliced thick

  • 1 large sweet yellow onion, sliced thick

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with aluminum foil or parchment paper.

  2. Chop ingredients: Slice the bell peppers and onions into thick, even strips. Slice the Italian sausage into 1-inch thick coins.

  3. Season: Place the sliced vegetables and sausage onto the prepared baking sheet. Drizzle evenly with olive oil, then sprinkle the garlic powder, oregano, salt, and pepper over the top.

  4. Toss: Use your hands or tongs to toss everything together directly on the pan, ensuring all ingredients are evenly coated with oil and spices. Spread them out into a single layer.

  5. Bake: Roast in the oven for 15 minutes.

  6. Stir and finish: Carefully remove the pan, give everything a good stir, and spread it back out. Return to the oven and bake for another 10-15 minutes, or until the vegetables are tender and the sausage is deeply caramelized and cooked through.

  7. Serve: Serve immediately on toasted hoagie rolls, over rice, or enjoy on its own. Enjoy!
