The Ultimate Peach Bellini Mocktail

Ingredients

  • 2 cups frozen peaches (slightly thawed) OR 2 large fresh peaches (peeled and pitted)

  • 1 bottle (750ml) Sparkling Apple Cider, well chilled (or sparkling white grape juice)

  • 1-2 tablespoons water or fresh lemon juice (only if needed for blending)

  • Fresh peach slices (for garnish)

  • Fresh thyme or mint sprigs (for garnish)

Instructions

  • Prep the fruit: If using fresh peaches, peel and slice them. If using frozen, let them sit at room temperature for 5-10 minutes to soften slightly.

  • Blend the puree: Place the peaches into a high-speed blender. Blend on high until completely smooth. If the blades get stuck, add a tiny splash of water or lemon juice to help it along.

  • Prepare the glasses: Set out four champagne flutes or stemless wine glasses.

  • Add puree: Spoon about 2 to 3 tablespoons of the smooth peach puree into the bottom of each glass.

  • Pour the bubbly: Slowly and carefully pour the chilled sparkling apple cider into each glass, filling it to the top. Pour at an angle to prevent overflowing.

  • Stir and garnish: Gently stir the drink with a long spoon to mix the puree and the cider. Garnish the rim with a fresh peach slice and a sprig of mint. Serve immediately and enjoy!
