1 (9-inch) graham cracker pie crust
2 (3.4 ounce) boxes instant coconut cream pudding mix
2 ½ cups cold whole milk
1 (8 ounce) container whipped topping (like Cool Whip), thawed and divided
1 cup sweetened shredded coconut, divided
In a large bowl, vigorously whisk together the two boxes of instant pudding mix and the cold whole milk for 2 minutes until it becomes thick.
Fold half of the thawed whipped topping into the pudding mixture using a gentle rubber spatula.
Fold ½ cup of un-toasted shredded coconut into the pudding mixture until evenly combined.
Pour the coconut cream filling into the graham cracker crust and smooth the top completely flat.
Place the pie into the refrigerator to chill for at least 4 hours (or overnight) until completely set.
While the pie chills, toast the remaining ½ cup of coconut in a dry skillet over medium-low heat for 3-5 minutes until golden brown. Let it cool completely.
Before serving, spread the remaining whipped topping over the top of the pie and garnish generously with the cooled toasted coconut flakes. Slice and enjoy!
