The Best Juicy Ground Turkey Burgers

Ingredients

  • 1 lb ground turkey (93% lean)

  • ¼ cup plain or Panko breadcrumbs

  • 2 tablespoons whole milk

  • ¼ cup yellow onion, grated (with juices)

  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon kosher salt

  • ½ teaspoon ground black pepper

  • ½ teaspoon smoked paprika

  • 1 tablespoon olive oil (for cooking)

  • Hamburger buns and toppings of choice

Instructions

  • Prep the Binder: In a large mixing bowl, combine the breadcrumbs and milk. Stir and let sit for 5 minutes until the breadcrumbs soften into a thick paste.

  • Add Aromatics: To the breadcrumb mixture, add the grated onion, minced garlic, Worcestershire sauce, salt, pepper, and smoked paprika. Stir well to combine.

  • Mix the Meat: Add the ground turkey to the bowl. Using clean hands, gently fold the mixture together until just combined. Do not overmix!

  • Shape Patties: Divide the meat into 4 equal portions. Gently form them into ¾-inch thick round patties. Press your thumb into the center of each to create a small dimple.

  • Cook: Heat olive oil in a large skillet over medium heat (or preheat a grill to medium). Cook the patties for 5-6 minutes per side, or until a meat thermometer reads an internal temperature of 165°F.

  • Rest and Serve: Remove from the pan and let the burgers rest on a plate for 3-5 minutes. Serve warm on toasted buns with your favorite toppings!
