2 cups white grape juice, chilled
1 cup refrigerated carton coconut milk, chilled
2 tbsp strawberry simple syrup (recipe below)
1/2 cup fresh strawberries, sliced
Ice cubes
1 1/2 cups fresh strawberries, diced
1 cup granulated sugar
1 cup water
Add diced strawberries, sugar, and water to a saucepan over medium heat. Bring to a simmer for 15 minutes until berries are mushy.
Let the syrup cool completely for 30 minutes, then strain through a fine-mesh strainer into a glass jar.
In a medium pitcher, combine the white grape juice and 2 tablespoons of your cooled strawberry syrup.
Pour in the cold carton coconut milk and stir vigorously until completely blended into a uniform pastel pink color.
