Homemade BBQ Chicken Pizza

Ingredients

  • 1 (12-inch) pizza dough (store-bought or homemade)

  • 1 cup your favorite BBQ sauce, divided

  • 2 boneless, skinless chicken thighs

  • 1 tablespoon olive oil

  • ¼ teaspoon kosher salt

  • ¼ teaspoon ground black pepper

  • ¼ cup red onion, thinly sliced

  • 1 tablespoon butter

  • 1 tablespoon red wine vinegar

  • ½ cup mozzarella cheese, freshly shredded

  • 1 tablespoon fresh cilantro, chopped (for garnish)

Instructions

  • Preheat: Preheat your oven to 400°F (200°C).

  • Cook the Chicken: Lightly salt and pepper both sides of the chicken thighs. Heat the olive oil in a skillet over medium heat. Place the chicken in the pan, cover with a lid, and cook for about 5 minutes on each side until fully cooked through.

  • Shred: Remove the chicken to a bowl and use two forks to shred the meat. Toss the shredded chicken with 2 tablespoons of the BBQ sauce. Set aside.

  • Caramelize Onions: In the same skillet used for the chicken, add the sliced red onions, butter, and red wine vinegar. Cook on low heat for 5 to 10 minutes until the onions soften and begin to caramelize. Remove from heat.

  • Prep Dough: Line a baking sheet or pizza pan with parchment paper. Roll or stretch your pizza dough out to form one 12-inch crust.

  • Assemble: Spread the remaining BBQ sauce evenly over the pizza dough. Sprinkle the shredded mozzarella cheese on top, followed by the BBQ chicken and caramelized onions.

  • Bake: Bake in the preheated oven for about 13 minutes, or until the bottom of the crust is nice and golden brown.

  • Garnish: Remove from the oven, sprinkle with fresh chopped cilantro, slice, and serve hot!
