4 thick cut bone-in pork chops (1-2 inches thick)
1/4 cup brown sugar
2 tbsp paprika
2 tsp kosher salt
2 tsp ground black pepper
2 tsp ground mustard
1 tsp onion powder
1/2 tsp garlic powder
1 tbsp vegetable oil
Remove pork chops from the fridge 30 minutes before grilling to reach room temperature.
Preheat your grill to medium-high heat (about 400°F).
Pat the chops dry with a paper towel and rub evenly with vegetable oil.
In a small bowl, mix the brown sugar, paprika, salt, pepper, mustard, onion powder, and garlic powder.
Apply the seasoning rub generously to all sides of the pork chops.
Place chops on the hot grill. Do not move them for 5-7 minutes.
Rotate the chops a quarter turn to create crosshatch marks and grill for another 2-3 minutes.
Flip the chops and grill for 2-3 minutes on the second side until the internal temperature reaches 140°F.
