4 mahi mahi fillets (approx. 6 oz each)
3 tbsp olive oil
2 tbsp fresh lime juice
3 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp sea salt
1/4 tsp black pepper
In a small bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, cumin, oregano, salt, and pepper.
Place mahi mahi fillets in a shallow dish, pour the marinade over them, and refrigerate for 20–30 minutes.
Preheat your grill to high heat (450°F). Scrub the grates clean and oil them twice using a paper towel dipped in oil.
Place the fish on the grill, close the lid, and cook for 3 to 4 minutes until a natural crust forms.
Carefully flip the fillets using a fish spatula and cook for an additional 3 to 5 minutes until the internal temperature hits 130°F.
Remove from heat, rest for 2 minutes, and serve immediately with fresh lime wedges.
