Best Freezer Breakfast Burritos

Ingredients

  • 8 large (10-inch) flour tortillas

  • 12 large eggs

  • 1 lb bulk breakfast sausage or bacon

  • 1 can (4 oz) diced mild green chilies, drained

  • 1 cup black beans, rinsed and drained

  • 1.5 cups sharp cheddar cheese, shredded

  • 1/2 tsp garlic powder

  • Salt and black pepper to taste

Instructions

  1. Cook the breakfast sausage in a large skillet over medium-high heat until fully browned. Drain thoroughly on paper towels.

  2. In a bowl, whisk the eggs with garlic powder, salt, and pepper. Pour into a lightly greased skillet over medium-low heat, cooking gently until just set.

  3. Spread the scrambled eggs, cooked meat, and black beans onto clean baking sheets to cool completely to room temperature.

  4. Lay each flour tortilla flat. Layer equal amounts of cooled eggs, sausage, green chilies, black beans, and shredded cheddar cheese in the center.

  5. Fold the left and right sides of the tortilla inward, then roll from the bottom up tightly into a secure cylinder.

  6. Wrap each burrito tightly in aluminum foil. Place the wrapped bundles into a gallon-sized freezer bag, press out the air, seal, and freeze.
