2 lbs red seedless grapes, washed and completely dried
2 lbs green seedless grapes, washed and completely dried
8 oz cream cheese, softened to room temperature
1 cup sour cream
1/3 cup granulated white sugar
1 tsp pure vanilla extract
1/3 cup light brown sugar, packed
1/2 cup chopped pecans, toasted
Wash all the red and green grapes, then spread them onto paper towels to dry completely.
In a large bowl, use a hand mixer to blend the softened cream cheese, sour cream, white sugar, and vanilla until perfectly smooth and creamy.
Drop the whole, bone-dry grapes into the cream mixture. Use a rubber spatula to fold until every grape is coated.
Transfer the mixture into a clean glass serving bowl, cover with wrap, and chill in the fridge for at least 1 hour.
Right before serving, sprinkle the packed brown sugar evenly over the top of the salad.
Top with a final layer of toasted chopped pecans. Serve cold.
