Old Fashioned Crispy Corn Fritters Recipe

Ingredients

  • 2 cups sweet corn kernels (fresh, drained canned, or thawed frozen)

  • 3/4 cup all-purpose flour

  • 1/4 cup yellow cornmeal

  • 1 tsp baking powder

  • 1 tbsp granulated sugar

  • 1/2 tsp sea salt

  • 1/4 tsp ground black pepper

  • 1/3 cup whole milk

  • 1 large egg

  • 2 tbsp unsalted butter, melted and cooled slightly

  • Vegetable oil, for frying

Instructions

  1. In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, salt, and pepper.

  2. In a separate small bowl, beat the egg, then stir in the whole milk and melted butter.

  3. Pour the liquid ingredients into the dry ingredients, stirring with a spoon until just combined.

  4. Gently fold in the sweet corn kernels until evenly distributed through the thick batter.

  5. Heat 1/2-inch of vegetable oil in a large cast-iron skillet over medium heat until it reaches 350°F.

  6. Drop tablespoon-sized balls of batter into the hot oil. Fry for 2 to 3 minutes until golden brown, flip, and fry for another 2 minutes.

  7. Transfer the hot fritters to a paper towel-lined plate to drain. Serve warm.
