2 cups sweet corn kernels (fresh, drained canned, or thawed frozen)
3/4 cup all-purpose flour
1/4 cup yellow cornmeal
1 tsp baking powder
1 tbsp granulated sugar
1/2 tsp sea salt
1/4 tsp ground black pepper
1/3 cup whole milk
1 large egg
2 tbsp unsalted butter, melted and cooled slightly
Vegetable oil, for frying
In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, salt, and pepper.
In a separate small bowl, beat the egg, then stir in the whole milk and melted butter.
Pour the liquid ingredients into the dry ingredients, stirring with a spoon until just combined.
Gently fold in the sweet corn kernels until evenly distributed through the thick batter.
Heat 1/2-inch of vegetable oil in a large cast-iron skillet over medium heat until it reaches 350°F.
Drop tablespoon-sized balls of batter into the hot oil. Fry for 2 to 3 minutes until golden brown, flip, and fry for another 2 minutes.
Transfer the hot fritters to a paper towel-lined plate to drain. Serve warm.
