Coca Cola Chicken Recipe

Ingredients

  • 1 lb (450g) chicken drumsticks (about 4-5 drumsticks)

  • 1.5 cups (350ml) Coca Cola (full sugar, do not use diet)

  • 2.5 tablespoons ketchup

  • 1-2 tablespoons vegetable oil

  • For the Aliño:

    • 3 cloves garlic, finely minced

    • 1 teaspoon ground cumin

    • 1/2 teaspoon curry powder

    • 1/2 teaspoon kosher salt

    • 1/4 teaspoon black pepper

    • 2 teaspoons water

  • For the Cornstarch Slurry (Optional):

    • 1.5 teaspoons cornstarch

    • 2 teaspoons cold water

Instructions

  • Prep the Aliño: In a small bowl, whisk together the minced garlic, cumin, curry powder, salt, pepper, and 2 teaspoons of water until it forms a loose paste.

  • Season: Rub the aliño paste evenly over all the chicken drumsticks.

  • Sear: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and sear undisturbed for 7 minutes until golden brown. Flip and sear for another 5 minutes.

  • Simmer: Pour the Coca Cola into the skillet. Reduce the heat to medium-low, cover with a lid, and simmer for 25 minutes.

  • Add Ketchup: Squeeze the ketchup over the chicken. Flip the drumsticks, cover the skillet again, and simmer for another 10 to 15 minutes.

  • Thicken (Optional): In a small bowl, mix the cornstarch and cold water until smooth. Pour this slurry into the bubbling sauce in the skillet. Stir constantly for 1-2 minutes uncovered until the sauce becomes thick, glossy, and sticky.

  • Serve: Serve hot over fluffy white rice!
