4 cups watermelon, cubed (about 1-inch pieces)
1/4 cup red onion, very thinly sliced
1/2 cup feta cheese, crumbled from a block
1/4 cup fresh mint leaves, thinly sliced
1 tbsp fresh lime juice
2 tbsp balsamic glaze (or balsamic vinegar)
Combine: In a large serving bowl, add the cubed watermelon and thinly sliced red onion.
Add Herbs & Cheese: Sprinkle the fresh mint and crumbled feta cheese over the top of the watermelon.
Dress: Squeeze the fresh lime juice evenly over the salad.
Finish: Right before serving, drizzle the balsamic glaze over the top. Toss very gently to combine. Serve immediately.
Make-Ahead: Chop all ingredients ahead of time, but store them separately. Combine and dress only when ready to eat to prevent sogginess.
This dish greatly depends on the quality of the feta. If you have options at your supermarket, look for true Greek or Bulgarian sheep’s milk feta, which tends to be creamier and tangier than domestic cow’s-milk versions.
To make this salad more substantial, add arugula.
