Watermelon Mint Feta Salad

Making this Watermelon Mint Feta Salad is incredibly straightforward. It is practically foolproof! 1.Prep the Watermelon: Cut your cold, seedless watermelon into bite-sized, one-inch cubes. Place the cubes into a large serving bowl. 2.Slice the Veggies and Herbs: Finely slice your red onion. Chiffonade (thinly slice) your fresh mint leaves. Add them to the bowl. 3.Crumble the Feta: Take your block of feta cheese and roughly crumble it over the top of the watermelon mixture. 4.Add the Citrus: Cut a fresh lime in half and squeeze the juice directly over the salad. 5.Drizzle and Serve: Right before you are ready to eat, drizzle the balsamic vinegar over the top. Toss very gently and serve immediately.

Ingredients

  • 4 cups watermelon, cubed (about 1-inch pieces)

  • 1/4 cup red onion, very thinly sliced

  • 1/2 cup feta cheese, crumbled from a block

  • 1/4 cup fresh mint leaves, thinly sliced

  • 1 tbsp fresh lime juice

  • 2 tbsp balsamic glaze (or balsamic vinegar)

Instructions

  • Combine: In a large serving bowl, add the cubed watermelon and thinly sliced red onion.

  • Add Herbs & Cheese: Sprinkle the fresh mint and crumbled feta cheese over the top of the watermelon.

  • Dress: Squeeze the fresh lime juice evenly over the salad.

  • Finish: Right before serving, drizzle the balsamic glaze over the top. Toss very gently to combine. Serve immediately.

Notes

Make-Ahead: Chop all ingredients ahead of time, but store them separately. Combine and dress only when ready to eat to prevent sogginess.

This dish greatly depends on the quality of the feta. If you have options at your supermarket, look for true Greek or Bulgarian sheep’s milk feta, which tends to be creamier and tangier than domestic cow’s-milk versions.

To make this salad more substantial, add arugula.
