3.5 lbs country style pork ribs (bone-in or boneless)
½ cup brown sugar, packed
1 tablespoon smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon kosher salt
1 teaspoon black pepper
¼ teaspoon cayenne pepper (optional)
1 cup BBQ sauce (your favorite brand)
Preheat: Preheat your oven to 300°F (150°C).
Dry: Use paper towels to pat the country style ribs completely dry.
Mix Rub: In a small bowl, whisk together the brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
Season: Generously coat the ribs on all sides with the dry rub mixture. Use your hands to press the spices firmly into the meat.
Bake Covered: Arrange the seasoned ribs in a single, even layer in a large 9×13 baking dish. Cover the dish very tightly with heavy-duty aluminum foil. Bake for 2 hours.
Sauce: Carefully remove the pan from the oven and take off the foil. Drain any excess liquid or fat from the bottom of the dish. Use a basting brush to coat the ribs generously with BBQ sauce.
Caramelize: Increase the oven temperature to 400°F (200°C). Return the ribs to the oven, uncovered. Bake for another 20 to 30 minutes, or until the BBQ sauce is sticky, caramelized, and bubbly.
