Easy Hobo Foil Packets

Ingredients

  • 1 lb ground beef (80/20 preferred)

  • 4 medium potatoes (Yukon Gold or Russet), diced small

  • 1 cup carrots, sliced thin

  • 1 medium yellow onion, chopped

  • 4 tablespoons butter (divided)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 tablespoon Worcestershire sauce

  • Non-stick cooking spray

Instructions

  • Prep: Preheat your oven to 400°F (200°C), or preheat your grill to medium-high heat.

  • Foil: Tear off 4 large sheets of heavy-duty aluminum foil. Spray the center of each sheet with non-stick cooking spray.

  • Mix Beef: In a medium bowl, gently mix the ground beef with the garlic powder, onion powder, salt, and pepper. Form into 4 even, flat patties.

  • Layer: Place one beef patty in the center of each piece of foil.

  • Veggies: Evenly divide the diced potatoes, carrots, and onions over the top of each beef patty.

  • Flavor: Drizzle a little Worcestershire sauce over the vegetables. Top each pile with 1 tablespoon of butter.

  • Seal: Bring the long edges of the foil together and fold them down tightly. Crimp the ends up to create a secure, sealed packet. Leave a little room inside for steam to expand.

  • Cook: Place the packets on a baking sheet and bake for 30-40 minutes in the oven. (If grilling or campfire cooking, cook for 20-30 minutes, turning once).

  • Serve: Carefully open the foil packets (watch out for hot steam!) and enjoy immediately.

Notes

  • Make Ahead: Assemble packets completely, seal them, and store in the fridge for up to 24 hours before cooking.

  • Vegetables: Cut your potatoes and carrots into small, uniform pieces so they soften at the same time the beef finishes cooking.
