5 fresh blackberries (plus extra for garnish)
8 fresh mint leaves (plus a sprig for garnish)
1 Tablespoon fresh lime juice (about half a lime)
1 Tablespoon simple syrup (adjust to taste)
1/2 cup club soda or Sprite (chilled)
Crushed ice
Prep the Glass: Add the fresh blackberries and mint leaves to the bottom of a tall, sturdy highball glass.
Muddle: Pour the fresh lime juice and simple syrup over the berries and mint. Using a wooden muddler or the back of a wooden spoon, gently press and twist to crush the berries and lightly bruise the mint leaves.
Add Ice: Fill the glass completely to the top with crushed ice.
Top and Stir: Pour the chilled club soda or Sprite over the ice until the glass is full. Slide a bar spoon to the bottom of the glass and gently lift upwards to mix the muddled fruit syrup throughout the drink.
Garnish: Slap a fresh sprig of mint between your hands to release the oils, and place it on top of the drink along with a whole blackberry. Serve immediately!
Make-Ahead: You can muddle the berries, mint, lime juice, and syrup together up to 24 hours in advance. Do not add the club soda until right before serving.
